I love dinosaurs too; always have! You chose a great topic because kids really do get into studying about dinosaurs. I am sure they had a ball with this unit. You have some really wonderful ideas and I can tell you are a very creative teacher. I loved the bag idea; kids love surprises and what a great way to get their attention. Your scaffolding and support structures really set them up for success with their poetry writing. You did a fabulous job!
